Easy and healthy Vegan pancakes made with 7 ingredients. High protein, nutrient dense, vegan pancakes! Easy to make, and can fit your nutrition goals, and makes for a tasty breakfast. This recipe makes 4 pancakes and ideally for 2 people. Half the recipe as needed if wanting for 1 person.
Ingredients:
- 125g Spelt Flour (about 3/4 of a cup) or flour of choice
- 1 cup of Almond or Soy Milk
- 1 Scoop of Protein powder (I used chocolate) or about 25g
- 2 Tbsp PB Powder
- 2 Tsp Baking Powder
- Cinnamon to your liking (for flavor)
- 70g Blueberries
Instructions:
- In a large bowl, mix the Spelt Flour, baking powder, cinnamon, protein powder, and PB powder.
- Add the plant milk and mix until smooth. Then add in the blueberries and mix. If the batter is too thick, you can add additional plant milk. It should be spoonable like traditional pancake batter.
- Next, preheat a non-stick pan on medium heat and allow the pan to warm up before putting batter on. (Feel free to use small amount of plant-based butter to coat the pan, I usually do use a small amount to prevent burning)
- Pour 1/4 of the batter into the pan and spread evenly and flip after bubbles form. Cook for another 1 minute or so on the other side.
- Repeat until all batter is used and enjoy!
Additional Toppings/Additions:
- Feel free to add Agave or Maple Syrup on top to your liking (this will change the macros)
- You can also add plant based chocolate chips pieces to the batter (again, this will change the macros)
- You can top it with your favorite fruit as well (I added banana on top in this recipe)
Macros:
With all the ingredients as shown below (Agave, Chocolate, and Banana also added), this comes out to 917 calories! But remember to divide that by 2 because each serving is 2 pancakes. So for every 2 pancakes it’s 458 Calories/serving with 25 grams of Protein! 80 grams coming from Carbohydrates, and the other 8 grams coming from Fat.
